Brine start The embalment of Big Larry begins! A strong brine solution
with a few old tea bags (tannins prevent mushy) is poured into him.
and he is covered up until the new fermentation vessel is ready tomorrow.
He will then complete his journey into adequate housing for metamorphosis into a pickle.

larryQuartzHat Sept 15: Big Larry, the Worlds Largest Pickle to be, has been trying to escspe! I just tosssed a double fist sized quartz crystal on the top of the water filed baggies used to hold Larrys neck submerged. If this wont work Thinking about syphoning brine from below to bring him gently to the bottom. His neck is already bent. Hmm... Cant seem to be able to google advise.... Go figure. I think Big Larry will loose most of his boyancy after the LABs finish eating the O2 and the released CO2 escapes.

Calgary bound! Mission Cow Town - Friendly Ferment Festival. Big Larry got strapped down in the Pope Mobile and managed not to turn into green soup through the mountains.

GANG Malcolm and Laura are two of the main energy sources to TLC (The Light Cellar www.thelightcellar.ca). They brought Sandor Katz, the greatest fermentation revivalist as star speaker. Sandor signed my copy of his book "The Art of Fermentation", AND Big Larry! How cool is that?  
strapped for home Big Larrys great road trip was a success!!!! He made it home in one piece, safe and sound. What will his next adventure be?

Guenness finally accepted our entry and sent the specs needed to gain this record in their books. After only 14 weeks and for no charge, rather than the "Fast Track" offered with a 3 day turn around {$3,200 pounds}, we find out the requirements. We did NOT use a bonified SURVEYOR  (whodathunk?). Hopefully someone else will read this in time to get the record as we had no clue other than length...... Big Larry had a great ride! We allow someone else the glory of beating the Guinness record.

"If your claim has not arisen from a competition, you must adhere to the following rules: 

a)    The specimen must be measured by a qualified surveyor in the presence of two independent witnesses. One of these witnesses must be a specialist in the field (e.g. a horticulturalist or botanist). 

b)    The specialist independent witness must confirm that the specimen is an authentic example of the species. The specialist witness must also provide details of their qualifications and professional affiliation. 
c)    Both independent witnesses must confirm that the skin of the fruit is intact and has not been pierced or otherwise tampered with. 
d)    Measurement of circumference must take place around the widest point and with the specimen skin still in situ. 
e)    Measurement of length should be carried out by placing the specimen on a plain surface (paper if possible) and by marking the exact position of each end. Stalks or any part of the foliage must be excluded. A straight line should then be drawn between the two marks and this length measured exactly. 
f)    Although this record is for the largest fruit or vegetable by size, the weight of the specimen should also be provided. Weight should be given in grammes to grammes to the nearest 0.01 g. Measurement of weight must be carried out on professional weighing equipment. Weights registered on domestic kitchen or bathroom scales will not be accepted. The weight should be exact and no approximation or deduction should be used to produce the final figure. 
g)    No sticks, dirt, stones or any material not forming actual plant matter of the specimen can be included in measuring or weighing. Note that in the case of very large specimens, the carrying tarp should be removed from beneath the vegetable before the weight is configured to ensure absolute accuracy. 
h)    Foliage can only be included if it forms an integral part of the fruit or vegetable, for example on a leek, cabbage or celery. 
i)    All roots must be cut cleanly from the main body of the specimen as near to it as possible, except where roots are an integral part of the specimen, for example in root crops. Therefore, roots can only be included with crops such as beetroot, carrots, radishes and parsnips. 
j)    Stalks must be trimmed as near to the main body of the specimen as possible. 
k)    For full details of the evidence required as part of your claim, please refer to the section titled ‘Please make sure you supply the following evidence’.

  • This record is for the longest cucumberThe cucumber is the edible fruit of the Cucumis sativus plant. 
  • This record may be attempted by an individual or a team.
  • This record is measured in centimetres, with the equivalent imperial measurement in feet and inches also provided. 

Rules for Longest cucumber

  1. This record is for the longest cucumber
  2. The sample must be a verified fruit of the Cucumis sativus plant.
  3. The sample must be grown for human consumption and edible at the time of measurement. 

Rules for 'largest fruit or vegetable by size' records

•    One cover letter explaining the context of the record attempt. Please indicate the date, time and exact location of the award, the name of the awarding body and judge (s), and the final measurements of the award-winning specimen.  
•    A copy of the award certificate
•    Copies of the competition rules 
•    A statement from an official of the prize-awarding body confirming that all competition rules were adhered to. An independent witness statement written by a person who observed the award being made. The statement should confirm the name of the awardee, the time and place of the award, and the measurements of the specimen. Please refer to Your Guide to Evidence for details of how to prepare a witness statement. 
•    Photographic evidence of the specimen (during growth, and from the competition) should be provided, if available.  
•    Video evidence should be provided, if available. 
•    Schedule 2 should be signed by you when you are sending in evidence which you either own or have permission to allow Guinness World Records to use. 
•    If you include any photographs or video in your evidence which you do not own or have permission to allow Guinness World Records to use, then you must include Schedule 3
•    Media articles (newspaper, online, TV or radio) can be submitted as part of the evidence requirements. This is not compulsory evidence. 

B)    For Non-Competition Claims (i.e. claims arising from fruit or vegetables that have not previously been entered into competitions) 

•    One cover letter explaining the context of the record attempt. Please indicate the date, time and exact location of the record attempt, your chosen witnesses and your record attempt measurement. Also please provide full details of the person(s)/organisation attempting the record including details on the preparation for the attempt. 
•    Claims submitted through established specialist publications are welcome. Please send a copy of the peer-reviewed paper, together with full publication details. 
•    A surveyor statement giving the measurements of the fruit or vegetable in cm, with the equivalent given in inches. 
•    One witness statement and one specialist witness statementdeclaring that all rules have been adhered to. Witness statements should include contact addresses, an email address and a telephone number. Please refer to ‘Your Guide to Evidence’ for details of how to prepare a witness statement.  Proof of qualifications/expertise of the specialist independent witness must also be provided. 
•    Photographic evidence of the surveyor’s measurement must be submitted. Other photographs of the specimen during growth should be submitted, if available. 
•    Video evidence  of the surveyor’s measurement must be submitted. 
•    Schedule 2 should be signed by you when you are sending in evidence which you either own or have permission to allow Guinness World Records to use. 
•    If you include any photographs or video in your evidence which you do not own or have permission to allow Guinness World Records to use, then you must include Schedule 3
•    Media articles (newspaper, online, TV or radio) can be submitted as part of the evidence requirements
   
Basic difference between LIVE pickling and DEAD pickling
 Salt-based pickles actually create their preservative properties through the act of lactic acid fermentation. Live cultures that live on the vegetables react with the vegetable starches in the presence of sea salt and water. They proliferate into trillions of microbes within a few days. These lactic acid bacteria dominate and ultimately rule this universe in a jar. Their action lowers the pH of the brine to a point that no pathogens can survive. This is the same microbial activity found in a healthy human gut. They perform the very same tasks in the small intestine as in the pickling jar; they create a pH so low that no pathogens can proliferate.
